Ingredients

[Dough]

  • Flour: 1 cup

  • Golden syrup: 1/4 cup

  • Vegetable oil: 2 tbs

  • Alkaline water: 2-3 drops

[Filling]

  • Mixed nuts (Walnuts, Peanuts, Almonds etc. ): 0.5 cup

  • Toasted sesame seeds: 0.5 cup

  • Toasted sunflower seeds: 0.5 cup

  • Sticky rice flour: 0.5 cup

  • Sugar: 0.5 cup

  • Vegetable oil: 2 tbs

  • Water: 3 tbs

Instructions

[Dough]

  1. Mix well flour (1 cup), syrup (1/4 cup), vegetable oil (2 tbs) and Alkaline water (2-3 crops), chill for 1 hour.

  2. Divide the dough into 6 portions.

  3. Roll each portion of dough into a small ball and press the balls into thin wrappers. (approximately 25g each)

[Filling]

  1. Chop mixed nuts into small pieces.
  2. Toast sticky rice flour in a heated pan or toaster.
  3. ( Pre-heat oven to 380 F.)
  4. Combine all the filling ingredients and mix well.
  5. Divide the filling mixture into 6 portions and shape each portion into a ball. (approximately 60g each)

[Shaping]

  1. Place a portion of filling on a wrapper, wrap the filling with the wrapper by carefully pushing the dough to the top, until the filling is fully covered by the dough.

  2. Lightly coat the moon cake with starch. Place the shaping mold over a moon cake ball, press remove gently.

  3. Place the moon cake on a baking pan and spray some water on the top, then bake for 5 minutes.

  4. Remove the baking pan from the oven, lightly brush the moon cake with whisked egg (caramel for vegan).

  5. Place the moon cakes back in the oven, and bake for another 15 minutes until the surface becomes golden brown.
